One thing I’ve really enjoyed learning since being on my own is how to cook. Growing up Greek, I’ve been surrounded by amazing homemade food. My mom, and both Yiayia’s are amazing cooks. Since getting older, I’ve had this pressure to become as good of cooks as they are. It’s still a work in progress…
While I’m not quite to the level of my mom and grandma’s, I have enjoyed trying new recipes. I typically try to meal prep healthy lunches and dinners for the work week on Sunday’s so that on the weekends I can allow myself some flexibility in my diet. I’ve come to rely heavily on a site called SkinnyTaste for most of my meals. The reason I love this site is because the recipes cater to different types of diets such as WeightWatchers and Whole 30. While I personally do not do either of those at this time, I did once do WeightWatchers and it’s nice to have as a reference point. Now, I mainly use My Fitness Pal to track calories and other nutritional values which is something that Gina, the woman behind SkinnyTaste, also includes with her recipes as well.
I wanted to share some of my favorite recipes that I’ve made:
1.Chicken Bruschetta– I’ve made this one many times and it’s easily one of my go-to’s when I want something easy but with taste. It also is great for meal prep because it makes a lot in a short amount of time.
2.Chicken Tzatziki Bowls– This is a great option for lunches! It’s easy, and also protein packed between chicken and quinoa which is helpful in keeping me full for the rest of the day.
3.Easy Bagel Recipe– Nothing beats a bagel for breakfast. However, I usually don’t eat them often due to not wanting to go too heavy with carbs. This easy, 5 ingredient recipe is a great way to still satisfy my bagel craving but not feel guilty about it! I’ve only tried this recipe by baking in the oven, but if you have an air fryer you can make them with that too! I’ve used just regular sesame seeds as a topping but my favorite is the Trader Joe’s Everything but Bagel Seasoning.
4.Spaghetti Squash Taco Boats– I’ve only made these one time simply because they take up a lot of space in the fridge. However, they have definitely been one of the tastiest recipes I’ve made. These too are super filling and the flavors in this recipe are to die for.
5.General Tso’s Chicken– I love Chinese food but Chinese food is typically high in sodium, and other things. This is a good way to still get my Chinese fill but do it in a healthier way. It is another one that’s good for lunches during the work week.
6.Chicken Stuffed with Spinach and Feta– this is actually not a SkinnyTaste recipe but one of my all time favorites. It’s also not the healthiest which is why I put mostly in the title of this post. One small thing I do to make it a tad bit healthier is instead of using normal cream cheese, I use the reduced fat cream cheese. This recipe is super easy and fairly quick to make. It’s also tends to be a crowd pleaser for when you cook for guests.
